New Food & Beverage Concepts to Open at Bellevue’s Food Hall Sept 20

Conscious Hospitality Group will unveil three innovative dining concepts—Club Seltzer, KODE, and EatDirt—at Lincoln Square South in The Bellevue Collection on September 20, 2024. Club Seltzer will be the region’s first nonprofit seltzer bar, offering non-alcoholic drinks with all profits directed towards climate restoration initiatives. KODE aims to combine the beloved Detroit-style pizza with exciting Korean flavors, featuring a menu that includes spicy gochujang sauce and marinated spicy chicken. EatDirt will mark its first physical location, previously a delivery service, providing a menu rich in fresh produce, salads, and a bone broth bar. The design elements of each venue are tailored to enhance the dining experience, with KODE showcasing a blend of Midwestern and Asian street food aesthetics. Jennifer Leavitt from The Bellevue Collection expressed excitement for the partnership, emphasizing the local focus and diverse offerings. Conscious Hospitality Group, founded by Daniel Brawer and Norman Wu, is committed to expanding its culinary footprint across the Pacific Northwest. This initiative reflects their ethos of creating food concepts that resonate with community values and preferences.
